Still white wine with structure, with floral notes of jasmine, hawthorn and acacia flowers, as well as fruitiness such as golden apple, William pear, apricot and tropical fruit such as pineapple and banana, as well as papaya. The spiciness brings back pink pepper and sweet cinnamon. On the palate it is dry, warm and soft, intense and persistent, with an important freshness, significant acidity and a mineral structure that enhances the complexity of the aromas. Definitely a full-bodied wine with a fairly fine quality on the palate. Partial refinement in oak barrels.
Grapes: 50% Chardonnay, 40% Garganega and 10% Trebbiano di Soave.
Pairings:
Ideal to combine with white meats, also processed and spiced, or with particularly aromatic cold cuts such as lard from Arnad seasoned on croutons. To be combined with roast turkey and duck meat. Excellent on fatty and aged cheeses, in particular semi-hard and hard cheeses of bovine origin or mixed bovine-goat cheese. Perfect with Vicentino cod.

Suoli sottili, tessitura fine, scheletro ghiaioso grossolano scarso in superficie, comune in profondità e drenaggio buono.
THE ROCKS MAINLY CALCAREOUS
Alonte, Colli Berici south of Vicenza is located on an area where the hills, on mainly limestone rocks, were formed by an ancient sea and emerged thanks to volcanic activity. Lean, fine-textured soils, coarse gravel skeleton poor on the surface, common in depth and good drainage.
THE COMPONENT OF CLAY
The Berici Hills, and in particular the southern area of Alonte, represent one of the most interesting crus for wines from the whole area. The medium-textured soils are rich in clay and limestone from fossil deposits deriving from an ancient sea and with the presence of volcanic material.
A virtuous mix that enriches the mineral component and favors the production of particularly fine wines for the calcareous component and full-bodied for the basaltic clay component.
